Lilac edible flowers are intensely fragrant with a mild, sometimes sweet, flavour. Use ½”-1½” fresh lilac edible flowers to garnish petit fours, carrot cake with cream cheese frosting, coconut cake, ice cream, micro dessert plates and tiny cakes, trifle, or to serve with liqueurs. Makes a lovely - albeit mild - syrup: 4 cups of blossoms yields 2 cups of syrup. For a stronger-tasting syrup requiring less flowers , try making rose petal syrup instead: 2 cups of flowers yields 2 cups of strong-flavoured syrup. Lilac edible flowers make an outstanding crystallized (preserved in sugar) confection. They also make a heavenly flavoured sugar. Available late May to early June for 2 weeks. Refrigerates 4-5 days.
