Crystallized lemon balm leaves carry an intense lemony flavour. Leaf sizes range ¾" - 3". To decorate and garnish cakes, cookies, cheesecakes, chocolates, cocktails, cupcakes, cookies, gin & tonics, ice cream, liqueurs, oversized coctail, petit fours, tarts. Fragile. Crispy like potato chips/crisps. Store in low humidity, away from direct sunlight. Humidity will turn crystallized flowers limp and difficult to handle. Air conditioning will restore crispness.
